Head Chef / Chef De Cuisine – Jordan – Position is based in a large residence with a large staff. Duties and Responsibilities: • Execute all food production and plating in a timely, efficient manner • Motivate staff and maintain discipline at all times • Take responsibility, in coordination with Executive Chef, for scheduling of staff in the kitchen and ensuring that schedules are posted in a timely manner • Check and order all items Daily for the Kitchen and ensure that adequate stocks of all food items are maintained • Work Closely with Executive Chef to place and control the daily local and International purchasing of products • Source new products and supplies to constantly develop menus • Take responsibility, in coordination with Executive Chef, for all stock rotation, and labeling with expiry date • Receive all goods and ensure that they meet quality specifications and reject those items that do not • Provide constant and appropriate training, at all levels, in production and presentation of food • Work closely with the Executive Chef in menu development and presentation • Work closely with the Pastry Chef in developing new desserts • Work closely with Executive Chef to standardize recipes • Ensure that standard recipes are being followed at all times where applicable • Ensure that all cook and hold temperatures of meats and sauces are maintained in accordance with HACCP and kitchen guidelines • Set standards and maintain food presentation quality at all times • Work Closely with Executive Chef to maintain detailed records of all kitchens’ crockery, cutlery and glass in all locations • Ensure that all inter-kitchen transfers are done in a timely manner and brought to the Executive Chef for authorization • Any other duties commensurate with the position as and when requested Updated 2-27-12
